Veggie Quinoa

I have to admit, sometimes I just have no idea what to make for dinner. One night a few weeks ago, my husband was hungry and wanted something different. It was late and I didn't have the energy for a trip to the grocery store so I tried something new. I took inventory of the vegetables and grains we already had in the kitchen and came up with the recipe below.

Unturkey Seitan Roast

A hearty, flavorful roast. Delicious with golden onion gravy.

Black Bean and Lime Chili

A black bean and lime chili dish.

Moroccan Vegetable Stew with Herbed Couscous

A warm, spicy stew.

Magnificent Mac N Cheese

Delicious version of the all american favorite:)

Light Pasta with Garden Vegetable Sauce

This is a great recipe to use a bunch of vegetables from your garden. It's also a great dinner for two.

Note that yellow summer squash can be substituted for the zucchini. You can also try other forms of pasta, although the recipe favors rotini.

Asparagus and Mushroom Grilled Pizza

This is an amazing pizza you can make on your grill. You can make the dough as indicated, or buy a vegan dough at many grocery stores in the refrigerator section. Either way, you will want to pick up a special utensil for grilling pizza, which I found without much trouble. It's worth it.

Lentils with Lemon (pomegranate lentils)

The combination of pomegranate, garlic, and fresh coriander is a Middle Eastern favorite in this recipe given to us by Nadia Koudmani, a Palestinian living in Damascus.

Pappardelle Pasta with Olives, Thyme, and Lemon

The sauce for this pasta dish, designed by chef George Germon of Al Forno restaurant in Providence, Rhode Island, takes only a few minutes to prepare.
