Mika’s Vegan Seaweed and Cucumber Salad

I post this simple little Japanese seaweed salad in honor of my friend Mika. Mika is a phenomenal cook, with a natural flare for flavors. Of all the incredible dishes she has shared with me over the years, this one will always be my favorite. Seaweed and cucumber salads are always bursting with flavor, but they are often made with sauces that contain a lot of sugar.

Burdock & Carrot Kinpira

Kinpira refers to a Japanese cooking style of braising vegetables, typically root vegetables, and often a combination of carrot and burdock. Burdock is a tenacious root that’s especially good for your liver and blood. It’s often available in farmers’ markets in the fall.

Nori Rolls

These rolls can be a main course or appetizer. They're quite filling, though. If serving as an appetizer, I would count on one roll (or 1/2 even) per person.
