Vegan Stuffed Eggplant

2 per eggplant
Ingredients: 

1 eggplant
1 onion
1 cup mushrooms
1 red pepper
fresh garlic (to your liking)
2 Tbsp. Olive oil (i also like coconut oil)
fresh basil
Seasonings (your choice)
Vegan cheese

Preparation: 

Slice eggplant in half. Scoop out and cut in to chunks
chop onions, mushrooms, pepper, and garlic.

Heat oil in fry pan. Saute ingredients until tender.

Put all ingredients in a bowl and mix.

Stuff eggplant.
Sprinkle with more cheese

Preheat oven to 350 degrees.
Bake 30-40 minutes.

The nice thing is you can use

The nice thing is you can use pretty much any veggies you like. And what ever seasonings as well:) Shredded carrot will add a nice color too.
