Black Bean and Lime Chili

A black bean and lime chili dish.
Ingredients:
3 cans black beans
2 Tablespoons olive oil
1/4 cup chopped garlic
1 Large red bell pepper
1 Teaspoon oregano
1 28 oz. can stewed tomatoes (chopped) with juice
1 cup yellow corn kennels
1/2 cup fresh chopped cilantro
1 cup chopped onion
1/4 cup fresh lime juice
1 teaspoon salt
Preparation:
1.- Drain and rinse beans. Set aside and heat oil in skillet and saute onion, garlic, red pepper, and oregano for about 5 minutes.
2.- Working in batches, puree all but one cup of the beans with water in a blender or food processor and put in main pot
3.- Stir the sauteed vegetables into the pot with beans, along with tomatoes and their juice, corn, cilantro, lime juice, and salt to taste.
4.- Simmer for 15-25 minutes
