Chocolate Marshmallow Dreams
a sweet and gooey cookie reminiscent of mallomars:)
for cookie:
1 cup flour, I used King Arthur unbleached white whole wheat
½ cup turbinado sugar, ground fine
½ cup unsweetened cocoa powder
1 tablespoon egg replacer, I used enerG
½ cup water
2 tablespoons sunflower oil
1 teaspoon baking soda
½ teaspoon vanilla
Pinch of salt

for marshmallow middle:

for chocolate drizzle:
1/4 cup coconut oil, softened
1/4 cup tablespoons cocoa butter, liquid measure after melting ( approx 1/4 cup grated flakes from block of butter)
1 heaping tablespoon cocoa powder
1 tablespoon agave
Optional:
pinch of salt
dash of vanilla
for cookie:
1. In medium size bowl, combine flour, sugar, cocoa, egg replacer, baking soda and salt.
2. In small bowl, combine water, oil, and vanilla.
3. Pour wet mixture into dry and mix well.
4. Drop by cookie dough scooper(level tablespoon) onto parchment lined cookie sheets, flatten slightly with a clean, wet finger.
5. Bake 10-12 minutes.
6. Cool cookies up-side down on wire racks.

for chocolate drizzle:
1. Melt cocoa butter in small cup placed over very hot water until liquid. I use a pyrex custard cup set in a mug filled with really hot water.
2. When melted, stir in coconut oil, cocoa, and agave (and salt and vanilla if using).
3. Stir until all ingredients are smooth.
4. Allow to cool until it is the texture of very thick hot fudge.

to assemble:
1. Top the center of the flat side of cooled cookie with 1 heaping teaspoon ricemellow crème. Try not to let it get too close to the edge, as it will spread out on its own:)
Wait about five minutes to allow settling before next step.
2. Drizzle chocolate across tops using teaspoon.
Store in single layer in a cool place or fridge.
The cookie is also good by itself with some chopped nuts mixed in:)
