Dark-Carob Brownies

Similar to Dark Chocolate Brownies, but delicious and lovely in it's own right. It is "Dark" both because of the roast-style, but also because the larger amount of carob used in comparison with traditional Brownie recipes. Obviously it would be alright to use cocoa if you prefered. I usually do a double batch, but this can be scaled down easily for a single person as well. What I love about vegan baking is the ability to fraction a recipe - you can't scale down an egg now can you.?

5 minutes + 30-40 minutes baking time

Ingredients: 

3/4 c. of Whole wheat flour
1/3 cup Dark Roasted Carob Powder
3/4 to 1 cup vegan granulated sugar (your taste should be the judge)
1 1/4 tsp Baking Powder
1/4 tsp of granulated salt (use something good, not iodized salt)
3/4 cup Rice milk, water, or another vegan milk
1/4 cup of your favorite oil
optional 1/4 c. nuts

Preparation: 

Oven should be Pre-heated to 350°F , and an 8"X8" pan greased with oil. Sift together (or merely mix) flour, Carob, Baking Powder, then add the nuts if you are using them. Combine the oil, salt and sugar together until the sugar dissolves just a little (45 seconds?). Add the dry ingredients to the wet mixture, stirring just 'til incorporated. Scrape batter into prepared pan.
