Mother in Law Lentils
A super-easy, inexpensive and nutritious way to celebrate the humble lentil. My mother in law used to make these for my husband when he was a child, hence the name.
Large bag of lentils
Large yellow onion, chopped fine
3-4 cloves garlic, pressed and minced
4-5 Italian plum or other meaty tomato, peeled, seeded and chopped
Water
Salt
Wash and sort lentils and cover with clean water in a heavy saucepan. Add onions, garlic and tomatoes, and bring to a boil. Lower to a simmer and cover with a tight-fitting lid. Cook, stirring every few minutes, for about an hour or until lentils are soft. Add more water if necessary.
Taste, season and enjoy! We used to top these with salsa and eat them with tortillas. They're even better if refrigerated and reheated. Who knew lentils could taste this good?
