Peppermint Patties
My grandmother makes these for me every Christmas Eve. Although she tries to keep them away from everyone else (the only vegan dessert on the table), they are inevitable scarfed up quickly by everyone. They are really delicious. I'll have to get a picture of them this year.
1/3 cup corn syrup
1/4 cup vegan margarine or butter substitute, room temp
4 and 3/4 cups powdered sugar
2 teaspoons pepermint oil/extract
1 bag carob chips
1. Whip together syrup, margarine, and peppermint in a mixer.
2. Add sugar by the cup while mixing until dry and crumbly.
3. Take a small handful of mix and press into patty shape.
4. Place patty on wax paper and continue with rest of mix.
5. Melt carob chips and take off heat to avoid burning.
6. Coat patties with carob mix.
7. Place in refrigerator to harden.
8. Serve.

These were so good. They were made primarily for Ray and Kandace, but the entire family munched on them. They taste just like the old fashion peppermint patties, and now a family favorite:)
