Savory Lunch Roll-Ups

These are flexible and can be filled with many different foods. They are also very good with a dipping sauce or salsa. Sprouted whole wheat tortillas make a nice option.

Servings: 
4 roll-ups
Ingredients: 

4 whole wheat tortillas
2 cups filling (try hummus with sprouts and tomato, bean salad, tempeh, brown rice, avocado, or whatever strikes your fancy)

Optional spreads

Avocado slices
Grated carrots
Grated zucchini
Shredded lettuce or cabbage
Pickles
Sprouts
Tomato

Preparation: 

Place tortilla flat on your working surface. Spread the filling in a fat line down the middle. Put whatever other garnishes you like on top.

Fold in the left and right edges to form a rectangle. Wrap the edge closest to you around the filling, press in tight, fold up the sides, and finish by wrapping the rest up like a rug.
