Zesty Macaroni salad

This is a family favorite. I wanted to find a way to use less mayonnaise. Adding pickle juice and red wine vinegar did that.

Servings: 
8-10
Ingredients: 

1 package small sea shell noodles
2/3 cup chopped red onion
1-2 carrots (shredded)
1 large can olives (chopped)
2 celery stalks (chopped)
1/3 cup red wine vinegar
1/2 cup dill pickle juice
Vegan mayonnaise to taste
Sea Salt & pepper to taste

Preparation: 

Cook noodles, drain and cool.
add red wine vinegar and pickle juice. Toss well. Cover and refrigerate 8 hours (over night)
add remaining ingredients and stir really well.
Taste, if it needs a little more zest, you can add more pickle juice and red wine vinegar.
Refrigerate about an hour before serving.
